Tom Yam Gung - Spicy Prawn Soup

Ingredients:

2 tablespoons grated fresh ginger
1 teaspoon cayenne pepper
6 cups Chicken Stock or chicken broth
6 tablespoons Thai fish sauce
8 ounces white sliced mushrooms
1 small onion, chopped
2 tablespoons chopped fresh cilantro
1 stalk lemongrass, white part only, cut into 1-inch pieces
5 fresh or dried lime leaves
1 pound medium shrimp, shelled and de-veined
3 tablespoons fresh lime juice
Chopped green onions

Total cooking time is 15 minutes

1. In a pot bring chicken soup stock to boil
2. Combine ginger, cayenne pepper, fish sauce, lemon grass, lime leaves
3. Add mushrooms, onion, prawns and let simmer five minutes
5. Remove from heat, add lime juice and garnish with green onions
