Pad Thai - Thai fried noodles

Ingredients:

3 cloves garlic
4 spring onions
add other vegetables to your liking
6 1/2 oz bean curd
10 oz soy bean sprouts
3 1/2 oz shrimp prawns, peeled
6 1/2 oz rice noodles
6 tbs oil
2 eggs
2 tbs rice vinegar
3 tbs sugar
2 tbs soy sauce
2 tbs fish sauce

1. Dice beancurd and vegetables, wash soy bean sprouts, cut spring onions into 1/2 inch long pieces, chop garlic.

2. In pot bring water to boil and simmer noodles for five minutes. Drain noodles and wash with cold water.

3. Heat oil in a wok or pan, add garlic, spring onions, prawns and beancurd and stir-fry for two minutes.

4. Add beaten eggs and gently scramble with beancurd.

5. Add noodles, bean sprouts, vinegar, sugar, soy sauce and fish sauce and stir well over high heat for 2 to 3 minutes.
